PowerMeal Week #2

It's Sunday Funday!

I'm doing Powercakes' weekly challenge, so I not only have ONE awesome meal to share with you all, but TWO which were superbly delicious and nutritious if I do say so myself. :)

So... let's get on with it!

*I have mentioned before and will mention again just for clarification that this is not ALL that I eat in a day. I know some people tend to be skeptical but I DO eat, and don't like when people think that I am 'not eating enough.' It irks me because I DO and I work hard to put this darn muscle on!*

Okay. Sorry for the rant. First up...


I realize this looks like crap on a plate. But it was delicious! It is egg whites (I would use a whole egg but I just wanted to finish up the last bit of the egg whites container I had) with spinach and mushrooms. Mashed avocado is on top and it is sprinkled with Italian seasoning. On the side I have a sweet potato sprinkled with cinnamonand a little pat of butter. Yummy. :)

And the second one...


Yes. Once again, this photo does absolutely ZERO justice to how delicious this was. I don't have a nice camera and unfortunately I am forced to use my iPhone.

This is brown rice, sweet and spicy tuna, edamame, cherry tomatoes, Brussels sprouts and pumpkin seeds mixed together in Braggs Liquid Aminos. Sprinkled with Italian seasoning (<-- love this stuff!)   I had already devoured half of this bowl before snapping a pic... oops!

Okay, well there you have it. My tummy was extremely satisfied with these two tasty meals. Today I plan on eating a huge bowl of frozen yogurt, or cake batter ice cream. But, we'll see. ;)

  3. pictures never do delicious food justice. especially because I don't have a real camera so i use my phone. totally no justice.

    1. I know! A phone's camera can never get it at the perfect angle or lighting, lol! Not to mention that I just plop my food on a plate and never make it 'look pretty.' Too lazy and hungry to do that. ;)

  4. Eggs and avocados are the best combination ever! I definitely load up the veggies when I eat eggs too. Haha, yah sometimes the camera doesn't do the recipe justice.

    1. I know! Ripe avocados are seriously amazing. Eggs are not the same without the veg! I wish I could take professional-like pictures but I am a horrible photographer. ;)
