It's recap time!
For this week's Marvelous In My Monday, I'm doing a little photo recap (well, it's not really little. It is kind of long, so if you don't like wordy posts, just look at the pictures!) Over the month of June, I participated in PowerCake's PowerMeal-A-Day Challenge and it was really fun! I posted a picture on Instagram (follow me @brittanyterry) for every single day and I loved it! Here's all my fantastic pictures; please hold the applause for my *amazing* food photography skills.
It's a very dark picture, but it included a tuna and spinach omelette with a sweet potato and strawberries and okra. Taste the rainbow.
Day 2 -- Red
I think a majority of the people participating posted strawberries, and being original and all, I posted some strawberries too. ;) I don't blame everyone because strawberries are delicious and nutritious!
Day 3 -- Orange
I had some fresh cantaloupe and sweet potato fries. I obviously had to post something sweet potato related because we are like *this*.
Day 4 -- Yellow
My other favorite carb source... nanners! I have some fresh ones that I like to slice on top of my oatmeal as well as frozen ones that I blend for smoothies.
Day 5 -- Green
Green foods are the best foods! Am I right, eh? I noshed on some green beans and some spinach, a staple in this girl's fridge!
Day 6 -- Blue
Are there really any other foods that are blue besides blueberries? Blue Raspberry Icees do not count hehe. ;) I had a smoothie with some blueberries from Trader Joe's Very Cherry Blend.
Day 7 -- Purple
A purple onion! It always hurts chopping these things and I swear it makes my eyes water more than watching My Dog Skip.
Day 8 -- Pre-Workout
I posted that recipe on the blog here. It's a rice cake with hummus and tuna sprinkled with Italian seasoning! Perfect mix of carbs, protein and fats to fuel me up.
Day 9 -- Post-Workout
These were phenomenal. They were protein pancakes made with vanilla protein powder, egg whites, cinnamon, nutmeg, baking soda, unsweetened almond milk, half a mashed banana and some stevia. Topped with the other half of the banana, some more cinnamon and nutmeg, a little bit of sea salt, and some sugar-free syrup! NOM.
Day 10 -- PowerBreakfast
Quinoa flakes with egg whites, chia seeds, unsweetened almond milk and plant protein topped with another nanner, dark chocolate natural peanut butter, cinnamon, nutmeg and a pinch of sea salt!
Day 11 -- PowerLunch
This was one of the most legit lunches I have had in awhile. True story: as I was devouring this creation of awesomeness, I was watching White Chicks. Classic. It's a sweet potato pancake (that I didn't screw up this time!) topped with natural peanut butter and sugar-free syrup (as well as the usual spices!).
Day 12 -- PowerDinner
This would be an extra lean turkey burger atop a bed of spinach with green bell pepper, a sweet potato with organic butter (yes, I do eat butter) and some cauliflower.
Day 13 -- PowerSnack
These bars are da bomb dot com. They are thinkThink bars: gluten free and sugar free! Score. I love their other flavors (and I haven't tried all yet but I desperately want to!) but this time it was a white chocolate bar and I happily scarfed that before I biked to the library.
Day 14 -- Clean Treat Meal
I wanted something a little different for breakfast so I made some protein French toast. I took two slices of Ezekiel original bread, coated it in egg whites mixed with vanilla protein powder, cinnamon, and nutmeg, and then transferred the slices to a pan set on medium heat. I then added sugar free syrup, natural peanut butter, and some more cinnamon, nutmeg, and sea salt. :) It definitely tasted like a treat!
Day 15 -- Nighttime PowerSnack
True story, I almost forgot to take a picture of this. Could you imagine if I had forgotten?! I was about to devour it when I remembered! It's plain Greek yogurt mixed with natural peanut butter.
Day 16 -- PowerSmoothie
...in a bowl. Any smoothie with a sweet potato is a happy smoothie, remember this for the future. I know Alex would be proud. ;) In the mix was a sweet potato, vanilla protein powder, spinach, strawberries, chia seeds, unsweetened almond milk, stevia, cinnamon, ginger (you MUST try even in banana smoothies), and nutmeg. Topped with more cinnamon, nutmeg, sea salt (see a trend here?) and ginger.
Day 17 -- Beverage
I added some of Sunwarrior's Ormus Supergreens to my beverage to get a quick dose of some nutritious greens!
Day 18 -- Side Dish
I almost always include veggies in a side dish, even with my 'sweet' meals. On this particular day it was some fresh cucumbers!
Day 19 -- Protein
I am a stickler for eating tons of meat and protein powder so I decided to try something different. I have been loving Meg's awesome tofu dessert recipe so I blended half of this tofu up with chia seeds, unsweetened almond milk, stevia, Trader Joe's Very Cherry Blend, cinnamon, nutmeg, and YES sea salt. :)
Day 20 -- Carb
Oh, carbs. My two favorite culprits: sweet potato and nanners. Love love LOVE them. Couldn't live without them and that's a legitimate FACT.
Day 21 -- Don't Fear the Fat
Oh I don't fear the fat, in fact it's my FAVORITE macro! I love me some healthy (and occasionally unhealthy) fats! I eat fats at every meal and I am not fat. Who woulda thought?! You knew this was coming though, as obviously I had to showcase my stash of nut butters, by far my favorite fat besides avocado! I am a nut butter hoarder. I should be on that one TLC show! (By the way, my amazing uncle and aunt got me the Peanut Butter & Co. and The Peanut Company peanut butters. They also are readers of this blog. Thank you guys! LOVE YOU!)
Day 22 -- On the Go
I don't like to eat these all the time but in a pinch they are good. This in particular is a Pure Protein bar in the flavor of Peanut Butter Caramel Surprise and it definitely is quite delightful! It has 2g of sugar and 18g of protein. I like to typically eat natural, whole foods but I was in a hurry!
Day 23 -- Out to Eat
This is a recycled picture from a few months back because I don't go out to eat much. We prefer homecooked meals! This was at the Grand Luxe Cafe in downtown Chicago. My mom and I rarely get down there so I decided to indulge. It was a great decision--these were the best chicken enchiladas ever!
Day 24 -- Meal For 2
These were some "tacos" if you will made with corn tortillas, chicken, avocado, and green bell pepper. Yummy!
Day 25 -- Meatless Meal
Love my breakfasts. This was oats with egg whites, cashew butter, banana, and sugar-free chocolate syrup sprinkled with cinnamon, nutmeg, a little ginger, and sea salt! And doesn't that picture look almost professional!? SCORE.
Day 26 -- Fruit
I LOVE fruit. It satisfies my sweet tooth like no other! Of course, my favorite fruit is bananas but we bought this whole carton of blueberries from Costco so I had to show off.
Day 27 -- Veggie
I eat veggies every single day. It is a promise I made to myself. I pretty much love ALL veggies (yes, I'm serious. Try me!) This was a yummy lunch I had consisting of sweet potato hash, tuna, a runny egg doused with none other than HOT SAUCE. And one of my favorite veggies on the side, asparagus!
Day 28 -- Cheat Meal
Like I have voiced before, I am not a fan of the term 'cheat meal.' I like that Kasey from PowerCakes refers to it as a 'treat meal,' because that is how I view it. If you live in the Chicago area, you should know about the famous Walker Bros. pancakse houses. They are PHENOMENAL. We got one of their frozen cinnamon apple pancakes, and demolished that thing like no other. (Can you see that it was too good for someone to wait for me to take a picture before digging in?!)
Day 29 -- Favorite PowerCake (my birthday!)
Woo! My birthday! To be honest, I had NO time to make a decent powercake because I was running around everywhere. So I will consider this delicious frozen yogurt as my 'favorite powercake.' ;) It is mint chocolate chip on the bottom and cotton candy on top! It was fabulous.
Day 30 -- Favorite PowerMeal
I was late on this as well, but this was my brother's birthday so I was running around everywhere again and couldn't get the picture up. This was one of my noms from my birthday. Tuna sashimi with an amazingly cut apple!

DeleteWow! Amazing post! I'm SUPER jealous of your nut butter hoard-- not gonna hide it. I thought I was bad before with 3 jars of PB (crunchy & salted, crunchy & unsalted, creamy & unsalted), plus a jar of almond butter and sunflower butter, but your collection --let's call it that ;)-- just blows my socks off! Seriously! :D

DeleteI'm doing her next challenge, too! It's less strenuous, as you don't need to post a picture everyday. You post a picture of a meal that you consumed every WEEK, and sort of like Katie's MIMM, you post about it! Much easier :)

Chocolate covered strawberry ehh not so good!
I have tried that one! I actually do not like it :( I love the PB or white chocolate ones! I have not tried the strawberry one and am a bit hesitant too now if it is bad hehe
