I usually do not post on Sundays, but... PowerCakes has a challenge for all of us to post a power recipe each Sunday so I thought I'd participate!
I had this as a part of my breakfast a few days ago. It was really yummy and I will definitely be making it again!

Oat Bran PowerCake
Ingredients:
- 1/3 cup oat bran
- 1/4 cup egg whites (or about 2-3 egg whites)
- 1/2 scoop vanilla protein powder
- 1/4-1/2 tsp. baking powder
- dash of cinnamon
- dash of nutmeg
Directions:
It's simple--spray a pan with non-stick cooking spray and put it on low-medium heat. Pour the batter on the pan and cook on each side for 2-3 minutes or until cooked through. Take off and place on a plate. (You can try to bake this in the oven or microwave instead but this is easier for me.)
I topped mine with maple syrup, organic butter (yes, I eat butter), a little peanut butter, bananas and blueberries (all placed all delicately along the edges, because I guess I was feeling sassy!)
I hope you all enjoy! Today in the Chicagoland area we are receiving a break from the heat YES! No 100 degree weather today! I am going to soak it up and get in a back and biceps workout later.

ReplyDeleteIt's funny; We're only in the upper 70-80 degrees here in Seattle, but everyone's already complaining about how hot it is!! lol, we're kind of wimps. ;)
I had a great workout--thanks! And I am sure you guys are just used to the cooler temperatures! After having nearly 110 degree weather all week, 80 degrees here is a WELCOME lol!
DeleteLooks good! I'm allergic to oat bran :( I ate it all the time and then a blood test told me I was allergic. Silly. It's all about the quinoa flakes and flour now!
ReplyDeleteOh no! Regular oats too?! That'd be awful :( I DO have quinoa flakes as well and have used them for a similar recipe, and it works just as well! Give it a try :)
