Strawberry Pretzel Jell-O Mold

Good morning! As promised, I have a delicious recipe here for you. I am ALL about health and whatnot, but if I had to choose a little summery 'treat,' I would so choose this. It's just so GOOD. I hope you all enjoy!

OH and this is all for Katie's new feature Marvelous Monday!

STRAWBERRY PRETZEL JELL-O MOLD

Ingredients:
- 2 cups pretzel sticks
- 1 1/2 cups butter
- 2 tsp. sugar
(^-- pretzel bottom; the first layer)
***
- 1 (8oz.) package of 1/3 less fat OR fat free cream cheese (don't get the full fat as it doesn't mix well)
- 1 cup sugar
- 1 packet of Dream Whip (follow directions of box) OR one container of Cool Whip
(^-- whipped center; the second layer)

***
- 1 (6 oz.) package strawberry Jell-O (I used sugar-free)
- 2 cups boiling water
- 1 or 2 cups frozen or fresh strawberries (depending on how many you want!)
(^-- strawberry top; the third layer)

Directions:

Place the pretzels in a large Ziploc bag and crush them into fine pieces (I leave a few chunks in there and I also used a can to crush them).

Place the crushed pretzels in a measuring cup and add the 2 tsp. of sugar. Mix the sugar in the pretzels and pour into a 9x12 baking ban that was previously sprayed with non-stick cooking spray.

Melt the butter in a small pan. Pour it over the pretzels in the baking pan and place it in the oven, baking at 375 degrees for ten minutes.

In a bowl or mixer, place the Dream Whip or Cool Whip (if using Dream Whip you have to add the 1/2 cup of milk 1/2 tsp. of vanilla extract, which is what I did). Whip until you get a smooth consistency with a beater or mixer.

Gradually add the sugar and the cream cheese. Beat all the ingredients together until you get a whipped consistency. (Feel free to lick the beaters) Place the bowl of the whipped layer in the fridge for about ten minutes.

In a different bowl (we used a giant Pyrex measuring cup) pure in your packages of strawberry Jell-O. Add the 2 cups of boiling water and mix the Jell-O thoroughly with the water.

Add the frozen or fresh strawberries, mix together, and place the Jell-O creation into the fridge to chill until it is set

On the pretzel crust (must be cooled), take out the whipped topping and spread over the pretzel crust. Be very gentle as you don't want to pull the pretzel bottom off of the bottom of the pan. Cover entirely.

Take out the Jell-O which should still be semi-jelled and pour it over the top of the whipped topping. Spread it around to cover the whole thing. Place in the fridge to chill overnight or for a minimum of four hours.

DEVOUR.

I really hope you all enjoy this. It has to be my favorite dessert, all coming from the roots of the best baker and chef out there in my heart, my grandma (and my mom too!) ThanksKatie, for reminding me of this spectacular dessert. :) Catch you all later hopefully!
